Description

The Italian Legacy, Preserved in Every Seed

Martino Roma is an extraordinary Italian paste tomato that carries centuries of Italian agricultural tradition and the commitment to quality that defines Italian food culture. This variety likely emerged in southern Italy during the 19th or early 20th century, developed specifically for making paste and sauce, and perfected by generations of Italian gardeners who understood that tomato quality determines sauce quality.

Compact, determinate plants (3-4 feet tall) are designed to produce their entire crop at once. Elongated, slightly curved fruits (2.5-3.5 inches long) are deep red and beautiful. The flesh is extraordinarily dense and meaty, seed cavities are minimal, and juice content is low. This is a tomato that understands its purpose and fulfills it with grace.

The flavor is rich and complex, sweet with good acidity, the kind that comes from generations of selection by people who cared deeply about taste. When cooked down into sauce or paste, the flavor becomes concentrated and intense, almost wine-like in its complexity. A single plant produces 15-20+ pounds of tomatoes in a concentrated 2-3 week harvest period. They are perfect for making sauce in one intensive session.

Growing Instructions

Days to Maturity: 75-80 days from transplanting

Planting Season: Start seeds indoors 6-8 weeks before the last frost. Transplant outdoors after all danger of frost has passed and soil has warmed to 15°C+ (late May to early June in most regions). Martino Roma’s concentrated ripening means it produces most fruit in a focused period.

Soil Preparation: Martino Roma thrives in rich, well-draining soil enriched with compost or aged manure. Space plants 18-24 inches apart. Determinate plants are more compact than indeterminate varieties but still need adequate space for air circulation and productivity.

Sowing Instructions: Sow seeds ¼ inch deep in seed trays or pots filled with seed-starting mix. Keep soil moist and warm (21-27°C) until germination (7-14 days). Transplant to individual pots when seedlings have 2-3 true leaves. Grow in bright light or under grow lights. Harden off gradually before transplanting outdoors for increasing periods over 7-10 days.

Sun & Water: Full sun (8+ hours daily). Martino Roma needs maximum light for abundant production and rich flavor development. Water deeply and consistently. Water at the base of plants, avoiding wetting leaves (reduces disease pressure). Mulch to retain moisture and regulate soil temperature.

Care & Maintenance: Martino Roma is determinate and grows to a set height (3-4 feet), sets fruit in a concentrated period, and produces its entire crop within 2-3 weeks. Plants benefit from stakes or cages (4-5 feet) to keep fruit off the ground and improve air circulation, though support needs are less intensive than indeterminate varieties.

Pruning is optional. Some gardeners prune determinate tomatoes lightly to improve air circulation, while others let them grow naturally. Martino Roma produces well either way.

Feed at planting time with balanced fertilizer, or every 2-3 weeks with diluted fertilizer. Martino Roma is a moderate feeder, and regular fertilization ensures good production.

Watch for common tomato pests and diseases. Remove lower leaves as plants grow to improve air circulation and reduce disease.

Harvest: Begin harvesting when fruits are fully colored (deep red) and slightly soft to gentle pressure (75-80 days from transplanting). Most fruits will ripen within a concentrated 2-3 week window. This concentrated ripening is perfect for sauce-making, as one can harvest everything at once and process it all together.

Storage: Store at room temperature, never in the refrigerator (cold temperatures destroy flavor compounds and create mealy texture). Process immediately for sauce, paste, or canning to capture peak flavor and quality.

Canadian Climate Notes

Martino Roma’s determinate habit and concentrated ripening are perfect for Canadian gardens. It produces all fruit within a focused 2-3 week period, ensuring everything ripens before frost. You can harvest when perfectly ripe and process all at once for preserving.

Start seeds 6-8 weeks before transplant to maximize the growing season. In warmer regions (southern Ontario, southern British Columbia), Martino Roma produces abundantly from mid-July through early August with a concentrated harvest perfect for sauce-making and preserving.

In cooler regions (Atlantic Canada, the Prairies, northern areas), Martino Roma still produces well, though the harvest window may be shorter. Start seeds early, use black plastic mulch to warm soil, and consider row covers to protect young plants and extend the season.

Martino Roma tolerates cool weather reasonably well for a paste tomato and continues producing until the concentrated harvest period ends, typically late August or early September in most Canadian regions.

The meaty flesh and minimal juice make Martino Roma particularly valuable in Canadian gardens as you get more usable tomatoes from each fruit, essential when the growing season is shorter.

Martino Roma is ideal for:

  • Sauce-making: Concentrated harvest perfect for making sauce in one intensive session
  • Preserving and canning: All fruit ripens at once for efficient processing
  • Families wanting authentic Italian sauce: Rich, complex flavor and meaty texture
  • Compact gardens: Determinate plants (3-4 feet) easier to manage
  • Efficient gardening: Harvest everything at once, process together

Culinary Notes

Martino Roma tomatoes are perfect for cooking and preserving. The meaty flesh, minimal seeds and juice, and rich complex flavor make them ideal for the Italian kitchen.

Excellent for:

  • Tomato sauce: Meaty flesh means less liquid to cook down; rich, complex flavor creates authentic Italian sauce. Simmer with garlic, olive oil, basil, and salt.
  • Tomato paste: Dense flesh and minimal juice ideal for paste. Cook down until thick and concentrated, almost like jam, for rich, flavorful paste.
  • Pizza sauce: Meaty flesh and rich flavor create concentrated sauce that won’t make pizza soggy. Cook down with garlic, herbs, and olive oil until thick.
  • Roasted: Halve lengthwise, toss with olive oil and salt, roast at 400°F until caramelized. Use in pasta, on pizza, in sandwiches, or as a side dish.
  • Fresh sliced: Thick slices with olive oil, salt, and fresh basil. Meaty texture and rich flavor shine through.
  • Canning: Meaty flesh holds up well during processing for whole tomatoes, crushed tomatoes, sauce, or paste.

The meaty flesh and minimal juice mean less waste and more usable tomatoes from each fruit. The rich, complex flavor intensifies when cooked, becoming almost wine-like in complexity. Rich in vitamins A and C, lycopene, potassium, and folate.

Hardiness Zones

3-11 (grown as warm-season annual; frost-sensitive but productive even in short seasons)

Seed Saving

Tomatoes are largely self-pollinating with minimal cross-pollination (typically less than 5%), making them excellent for seed saving. Select the best fruits from your healthiest, most productive plants.

Cut fruits in half lengthwise, squeeze seeds and gel into a jar or bowl, add a little water, and let ferment for 2-4 days at room temperature (fermentation removes the gel coating that inhibits germination and kills some seed-borne diseases). When fermentation is complete (bubbles form on the surface and the mixture smells unpleasant), add water, stir, and let settle. Viable seeds sink, dead seeds and pulp float. Pour off floating material, rinse seeds thoroughly, and spread on screens or plates to dry completely (1-2 weeks).

Store dried seeds in a cool, dry place. Tomato seeds remain viable for 4-6 years. Each fruit contains 40-60+ seeds.
